Dalwhinnie has experienced both types of condenser during its history. ‘My recollection is that it found itself needing new worm tubs in the 1980s when the whisky loch was filling up and distilleries were working a three-day week,’ says Beveridge.
Our recent blog post on the importance of copper contact in whisky distillation mentioned the two condenser systems currently used in the Scotch whisky industry: worm tubs and shell and tube condensers. Shell and tube condensers are more modern, easier to repair/replace and thought to provide better copper contact. This style has largely replaced traditional worm tub condensers in the industry.
28 de feb. de 2017 · This is the same idea used for the ‘Worm Tub’ condenser. They are not used as much today by distilleries, in fact only approximately 15 use them on their equipment. The simple Worm Tub was superseded by the ‘Shell and Tube’ condenser in the 1960’s, from my research it seems that Macduff Distillery was the first to have them installed ...
22 de feb. de 2024 · Distillery manager Euan Henderson says, “[worm tubs] result in a more full-bodied, flavorsome and sulfur-y new make spirit. When combined with shell and tube condensers, it can also bring out a fruitiness which we look for in our new make spirit.” The Japanese Yamazaki Distillery also operates on a similar dual-condenser system.
