Eddie is a character from theatrical and cinematographic productions of The Rocky Horror Show since 1973 to this day, including the 1975 original film, the 2015 tribute production celebrating 40 years, and the 2016 reimagining film.

There's also the question of why Frank put him in the freezer atop his motorcycle, facilitating his grand entrance and use of the vehicle to wreak havoc.
In response to this, the tablecloth is pulled off the table to reveal Eddie's hacked-up body in a glass case... and the fact that they were being served roast Eddie for dinner. Brad and Dr. Scott are paralyzed with terror, and Janet runs to Rocky's arms.
After several hits with the antimatter gun, Rocky dies and the fake radio tower becomes electric, and, had Rocky been alive, eletrocutes his body. The tower breaks and the dead bodies topple backwards into the swimming pool.
