In that first book, George is living in an African jungle when he's captured by the Man with the Yellow Hat. While on a ship to America, George has his first adventures, which include accidentally falling overboard while imitating birds.

Below we explain it further, but bottom line: if he is a monkey, he is probably the Barbary macaque as that is the only monkey from Africa that lacks a tail. If he is an ape, which is what most people believe, he is probably a Chimpanzee.

The man with the yellow hat took Curious George on the boat. On the boat, George was curious about something that made him land in the water.
