The Lox, an acronym for Living Off Experience, formed in Yonkers in the mid-'90s, attracting the eye of fellow Yonkers native Mary J. Blige with their underground demos and mixtapes. Blige fast-tracked their demo to Puff Daddy, who signed them to his Bad Boy label and featured them on his 1997 smash "It's All About the Benjamins."

Add alcohol: Vodka, gin, pastis, or Pernod are delicious ingredients to add to your cure mix.One to 2 tablespoons will add a lovely back note of flavor. Enhance the color: Add 2 to 3 tablespoons of raw, finely grated beet to the cure mix. It will turn the salmon a glorious pinkish-red color, which is stunning on the plate.

Refrigerate again, this time uncovered, for up to 12 hours or overnight. Slice and enjoy! Use a sharp knife to cut thin slices.
