We have no general term, so just say "rainbows" (plural) when talking about all of them. Electricity isn't a specific item. It is a substance, so you can have a quart of it, a kilowatt-hour of it.

I think it's a simile that, as Edinburgher discerned, simply omits the operative term. A simile compares two things; a metaphor equates them. This is a comparison.
