Of course, the issue is when the creature walks around the mount, you are no longer Hidden since you no longer have cover, and get no benefit from Nature's Prowler. Literally the only way this works is if your GM rules that while you are riding on top of a creature, the creature is also providing enough visibility blocking that it provides lesser cover to visual sight lines.
