You won’t get the platinum trophy until you do her ending. Her ending is part of the requirement for the final trophy. As others have said, you can pretty much pick your ending. The only one that is close to a "Point of no Return" would be the "Let chaos take the world!!!!" ending.
For the actual point of no return, it is the last save point before the final boss. Edit: I think you can finish the castle and still have time. Just don’t advance more.
