There were a lot of angels and archangels present during the apocalyptic (or near-apocalyptic) events of Good Omens, including Gabriel, Michael, and Uriel, and most of them had names ending with "el".
I think the simple-ish answer is that the sources they're based on tend to default to male pronouns for angels and demons. I don't just mean the original novel, but the Bible and the various bits of esoterica that various angel and demon names were taken from.
