Add flour, a little at a time, stirring constantly with a wooden spoon – being careful not to burn the roux. After flour is added, cook about 3 minutes, until roux smells nutty, is pale in color and the consistency of wet sand.

Quarterthe other onion, and throw it in the saucepan along with the bay leaf, cayenne pepper and salt. Cover the pan and allow the dish to simmer until the meat becomes tender. This should take you about 2 hours or so.
