Thor still wins even without stormbreaker. He can already put up a decent fight even without his powers. Once Thor unlocked his powers in Ragnarok, he got much stronger than the others. Iron man did get boosted by Thor's lightning when they fought, but that was because he made the suit more resistant to lightning in response to Whiplash.

Bruce is an incompetent pilot who trips over within about 10 seconds of his debut. He gets overwhelmed by a few Outriders, which are individually weaker than Captain America. The version of Thor you refer to was winning against the Hulk even after having his hammer broken.
Thor would definetly win. Thor got knocked around abit but there was no noticeable damage on him, this is despite iron mans power getting boosted by 475%. Despite that boost iron man still had noticeable damage on his suit and would have likely been taken out the fight or badly injured had cap not blocked that final blow with his sheild.
