As of right now if Baki was serious the fight would instantly end in one hit before Jack even realized Baki attacked. Baki isn't just superior to Jack. Baki could beat Jack, Sukune, and Oliva at once. Baki is THAT strong.
They all taste defeat, even several times. Yes, they all thought that "real" defeat was dying. But the Baki team showed them than there are other ways to be defeated and still some of them take it better than others.
On top of this, I think his calmness can be explained by the fact that he knows Baki has already brought Yujiro to heel. He has accepted defeat in that respect, and isn't consumed with trying to climb that mountain anymore.
