The armor pieces you destroy will remain destroyed if you refight the Old Knight again. This can be useful since you have two turns to heal or perform other actions without worrying about the Old Knight's right arm attacking before the Spectre knight manifests into battle.
They will walk towards the player if they see them, and will instantly attack the player if they attempt to enter Nosramus' laboratory.
