Animals that live at Lincoln Park Zoo always have the choice to be indoors or out, in view of the public or not. This is a zoo policy that promotes positive animal welfare.

Soak the scallops for at least 15 minutes. Remove the seafood from the marinade and you can either thread the scallops onto skewers or grill them without skewers.

In a small bowl, whisk together the cilantro, olive oil, lime juice, honey, chili powder, cumin and salt and pepper. Pour the dressing over the beans and vegetables and toss gently to coat. Serve.
