With a tamed dung beetle, you can load its inventory up with feces which it will process and convert into both fertilizer and oil. Fertilizer is great for increasing crop efficiency and oil can be crafted into a number of different things.
The dung beetle's genus Scarabidae actually refers to the group that dung beetles belong in, the scarab beetles. At one point in the dung beetle dossier, the author refers them as worthy of being worshiped. Presumably this is a reference to how the Ancient Egyptians considered them to be sacred.
