The Old knight can be found on top of a tomb in the leftmost part of the level 5 Mines. The player has the options to examine or attack. Examining indicates that there's something underneath the Knight, hinting that stealing from them in battle will give the player a Diamond.

The only way to get rid of the Spectre Knight is to defeat the Armored Knight. The Spectre Knight will alternate between using Horizontal sweep (24-36 damage, Arm cut 20%, Arm/leg infection 30% each) and Vertical sweep (36-54 Damage, leg or arm cut 100%).
