When I got home this evening the blowoff activity had sped up and I had a mini panic attack, thinking I had jumped the gun on the D-rest. The beer was at 62F, and I measured gravity to be 1.020. From what I read, the gravity is now at a point where a D-rest is appropriate, but I’m still paranoid about cranking the temp too soon.
