Frederick Jay "Rick" Rubin, född 10 mars 1963 i Long Beach, New York, är en amerikansk musikproducent och skivbolagsdirektör.Han grundade tillsammans med Russell Simmons 1984 skivbolaget Def Jam Recordings.Efter att ha lämnat bolaget 1988 grundade han American Recordings..
