Other way is to just wait for NG+ and kill the demon at the start of the second run ;) Edit: it would be kind of hard (and pointless IMO) to upgrade your character so that you could use that weapon in your first play through, since its 50 strength requirement is pretty high. That’s why I think killing him in NG+ is a no brainer.
If this is your first time visiting the Asylum Demon don't fight him. Instead stay to the left hand side of the room and exit through the door. On the other side is a bonfire, and from here you can traverse the rest of the area and get your weapons and shield. When you pass through the fog gate do a plunging attack down onto the demon.
